Tomato and Beetroot Soup

To make Tomato and Beetroot Soup you will need

3 tomatoes (large size)
1 beetroot (grated)
1 onion (medium sized)
½ inch piece of ginger
4 to 5 garlic cloves
1 cup vegetable stock
1 bay leaf
Salt and pepper to taste
¼ cup coconut cream (or fresh cream)
2 tbsp olive oil (dairy butter or any vegan butter)

Prepare tomato beetroot soup like this

In a pan or pot, add beetroot, tomato, onion, salt, bay leaf, ginger, garlic, stock and salt.
Boil it, cover and cook until the beetroots are cooked.
Add bay leaves, using a blender, blend the soup to make a smooth puree.
Place the soup pot again on the gas stove, add olive oil or butter and cook on low flame for 2 to 3 minutes.
Add cream (fresh cream or coconut cream) and cook on low flame for a minute.
Your beetroot tomato soup is ready to serve.
