This recipe of radish carrot pickle is a combo of taste and health, try this traditional method

Carrots and radishes are two such vegetables which are considered as the primary ingredients of raw salad. In winter, various dishes are prepared from carrot and radish which are rich in nutrients. Especially radish carrot pickle is very much liked.

Winter is the season of many special fruits and vegetables. Two special root vegetables, carrot and radish, are harvested this season. Carrots and radishes have many characteristics, which can prove to be extremely beneficial for your health. Both these vegetables contain many important nutrients. Their taste is also amazing, and people also like them very much. Carrots and radishes are two such vegetables which are considered as the primary ingredients of raw salad. In winter, various dishes are made from carrot and radish which are rich in nutrients and their mixed juice (Carrot and radish juice) is also very much liked.

My grandmother is a big fan of carrots and radishes, and every winter she makes various dishes with them. My favorite of all the dishes made by him is “Carrot and radish pickle”. The combination of carrot and radish pickle with roti, rice, paratha etc. tastes very tasty.

I especially wait for winters for radish carrot pickle. It is not only tasty but also good for health. So I thought why not share its recipe with all of you. So let’s know grandmother’s special recipe of radish carrot pickle (how to make gajar aur muli ka Achar).

Mooli Gajar Achar Recipe

For this you need

500 grams radish (peeled)
250 grams carrots (peeled)
50 grams green chilli
50 grams ginger
salt as per taste
1/2 cup mustard oil
1 teaspoon red chili powder
1 teaspoon turmeric powder
1/2 teaspoon coarsely ground black pepper
4 teaspoons coarsely ground mustard powder
1/2 teaspoon celery
2 pinch asafoetida
2 teaspoon vinegar

  1. Wash radish, carrot, green chilli and ginger and dry them thoroughly. Now cut radish and carrot into 2 inch pieces and keep them in a bowl.
  2. Cut ginger into 1 to 1.25 inch long and thin pieces and green chilli into thin slices, keep it in the same bowl.
  3. Add 2 spoons of salt in it and mix well. After this, all the ingredients have to be sealed in a glass jar and kept for 24 hours.
  4. After 10 to 12 hours, mix it by shaking or stirring it with a spoon. Next day, filter the pickle juice in a bowl. Keep it for 10 minutes to filter the juice thoroughly.
  5. After 10 minutes, when the juice comes out, spread it in a tray and dry it with a fan or in the sun. When the radish and carrots become dry, add salt again and add turmeric powder, red chili powder, fresh and coarsely ground black pepper, carom seeds and 6 teaspoons of coarsely ground mustard and mix well.
  6. Here heat a pan and add 1/2 cup mustard oil in it, until smoke starts coming out.
  7. Then turn off the gas, and let the oil cool down. When the oil cools down, add asafoetida in it. Now add asafoetida flavored oil to the pickle.
  8. Mix all the ingredients well and add 2 tablespoons vinegar to the pickle.
  9. Put all these ingredients in the same glass jar. Keep the pickle in the sun for 3 days and keep stirring it in between.
  10. Your pickle is ready, now you can keep it in the kitchen at normal room temperature. This pickle can be eaten comfortably for 3 to 4 months.

Keep some tips in mind:

  • If the carrot is yellow from inside and you don’t like it, then don’t use it.
  • You can use raw mustard oil without heating it. If you don’t like its raw taste, use it after heating it.
  • Vinegar used in pickles enhances its taste and also increases the shelf life, hence it is recommended to add vinegar.
  • The vessel for making pickles should be clean and dry.
  • If you want to increase the shelf life of pickle, use a clean and dry spoon to take it out while eating.
