1 tablespoon apple cider vinegar
1 ½ cups almond milk
2 cups flour
4 dates
2 teaspoons baking powder
½ tsp baking soda
½ teaspoon salt
½ cup coconut oil, heated
1 ¼ teaspoon vanilla extract

  • Preheat oven to 350 degrees F (175 degrees C). Grease a muffin pan or line with paper baking cups.
  • Mix almond milk and apple cider vinegar together in a cup and let it curdle.
  • In a large bowl, whisk together flour, date puree, baking powder, baking soda and salt.
  • Here in a separate bowl, whisk together the almond milk mixture, coconut oil and vanilla.
  • Add the wet ingredients to the dry ingredients and mix until combined.
  • Now pour the prepared batter evenly into the baking cup.
  • Place in the oven and bake until the tops spring back when lightly pressed, about 15 to 20 minutes.

2. Vegan brownie

To make it you need:

2 tablespoons ground flaxseed
200 grams dark chocolate
(roughly chopped)
½ tsp coffee (ground)
80 grams vegan butter
150 grams flour
70 grams ground almonds
50 grams cocoa powder
¼ teaspoon baking powder
4 spoons date puree
1½ teaspoons vanilla extract

  • Heat the oven to 170c fan/gas 3½.
  • Mix flaxseeds with 6 tablespoons of water and keep aside for at least 5 minutes.
  • In a saucepan, melt 120 grams of chocolate, coffee and butter with 60 ml of water over low heat. Then let it cool a little.
  • Combine flour, almonds, cocoa, baking powder and ¼ teaspoon salt in a bowl and mix to remove lumps.
  • Using a whisk, add the date puree to the melted chocolate mixture, stirring well until smooth and shiny.
  • Stir together the flaxseed mixture, vanilla extract and remaining chocolate, then the flour mixture.
  • Grease the cake maker container with butter and put the prepared chocolate batter.
  • Bake for 35-45 minutes, checking to make sure there is no moisture left.
  • Let the cake container cool completely, then cut into squares.
  • Give them your favorite garnishing and serve at the party.

3. Vegan custard

To make this you need

4 tbsp custard powder
4 tbsp sugar or brown sugar
800 ml low fat coconut milk
200ml water

Prepare vegan custard like this

  • Mix custard powder with sugar. Add 4 tablespoons coconut milk and make a smooth paste.
  • Heat coconut milk and water together until almost boiling.
  • Whisk the custard powder into the coconut milk mixture until it resembles a smooth custard sauce.
  • Then add it to the pan with the remaining hot coconut milk.
  • Bring to a boil over low heat, stirring constantly, until you get a thick, smooth custard.
  • You can add your favorite fruits to your custard.
  • Cool the custard and serve with your favorite toppings.
